- 1 lb. angel hair pasta
- 1 tbsp. extra-virgin olive oil
- 1 large onion chopped
- 1 large carrot peeled and chopped
- 1 celery stalk chopped
- 3 cloves garlic minced
- 1 lb. ground turkey
- kosher salt
- Freshly ground black pepper
- 1 28-ounce can crushed tomatoes
- 1/2 c. dry white or red wine
- 1/4 c. freshly chopped parsley
- 2 tsp. dried oregano
- freshly grated Parmesan

- Angel hair should be cooked in a big saucepan of salted boiling water until it reaches the al dente consistency specified on the box.
- Drain, then put the liquid back in the saucepan.
