Healthy Chef Salad is my all American salad consisting of hard-boiled eggs; one or more varieties of meat, such as ham, turkey, chicken, or roast beef; tomatoes; cucumbers; and cheese; all placed upon a bed of tossed lettuce or other leaf vegetables. To make my Chef Salad Healthier for me, I use chicken and turkey to stay away from the high sodium and add a little mozzarella cheese or pepper jack, tomatoes, boiled eggs, black olives, cucumbers, and some red peppers if I have them on hand (love the cucumbers and tomatoes from the garden) and because of my food intolerance to iceberg lettuce, I use romaine hearts and sometimes add another leafy green mixed in.
Healthy Chef Salad
- Chicken breast (, cooked)
- English cucumber
- Iceberg lettuce or romaine
- Tomatoes
- Black Olives
- Red pepper
- Green pepper if you prefer
- Low fat Mozzarella or Pepper Jack Cheese
- Mix in large bowl or you can layer it
- Serve with your favorite lite dressing
