Sweet and Sour Chicken
- 2 lbs (about 4 Medium) boneless, skinless chicken breasts
- Salt and Pepper to taste
- 1 cup cornstarch
- 3 large eggs (, lightly beaten)
- ¼ cup extra light olive oil (, canola or vegetable oil to saute, plus more as needed)
- ½ cup apple cider vinegar
- 4 Tbsp ketchup
- 1 Tbsp soy sauce
- ¾ cup granulated sugar
- 1 tsp garlic salt
