Your’e going to love this Low Carb Mini Pepper Pizzas. Let’s face it: The best part of the pizza is the combination of cheese and toppings. You order your slice based on those two very things. Not the crust. Don’t get me wrong, crust can be addictive, sure. All bready things are. But if cauliflower, broccoli or zucchini pizzas have taught us anything, it’s that a traditional gluten-heavy crust isn’t absolutely necessary. Pepperoni and mozzarella taste just as good on top of vegetable base.

Mini Pepper Pizzas (Low Carb)
- Preheat oven to 350°.
- On a sheet tray, drizzle peppers with olive oil and season witih salt and pepper. Spoon sauce onto each pepper half. Sprinkle with mozzarella and Parmesan and top with pepperoni. Bake for 10-15 minutes, until the peppers are crisp-tender and the cheese is melted.
- Garnish with parsley.
